Blueberry quick bread

Does anyone have a good recipe for a low-fat version of blueberry quick bread? Or blueberry muffins? Just please not a lot of oil/butter etc.

  • Half a mashed banana will replace an egg too.

We sub low fat yogurt for half the oil in things as well. The extra protein will help you even more to bind it and retain moisture.

    Applesauce like the PP said!

  • I believe you can substitute butter for applesauce or finely grated butternut squash

  • Thanks! Do you know if you can use egg whites instead of whole eggs? I'm on a low fat low sodium diet, and its difficult!

  • The website says
    Eggs:
Eggs are a great binder and leavener, but they're also high in cholesterol. For each replaced egg, grind a tablespoon of flax seed and dissolve it in 3 tablespoons of water. When it breaks down, it will have the same gooey consistency as an egg, and possess the same binding power. It's also a shot of nutritional goodness, as flax seed is a good source of essential fatty acids. As a replacement leavener, substitute two egg whites for each whole egg.
