Bruschetta chicken bake..Whats your recipe?

Hi...I have a recipe for it but was wondering if one of you might have a better one? How do you make yours?
And what do you think would be a good side dish to go with it or should I just serve it alone?
It's for dinner tonight!
Heres the recipe I might use..unless one of you give me a better one! :)
1 can diced tomatoes,drained
1 pkg stuffing mix,garlice cloves, boneless,skinless chic breast halves,dried basil leaves,shredded motzarella
Heat oven to 450
Combine tomatoes,stuffing mix and garlic until stuffing is mozzarella cheese
Place 1 chicken breast on center of foil sprayed with cooking spray,top with basil,stuffing mixture and cheese. Fold closed,(leaving room for heat) Place in pan
Bake 30-35 mins or intil chicken is done.

  • This is one I use from Recipezaar.

    1 (14 1/2 ounce) can diced tomatoes, undrained
    2 garlic cloves, minced
    1 (6 ounce) package chicken flavor stuffing mix
    1/2 cup water
    1 1/2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
    1 teaspoon dried basil leaves
    1 cup kraft shredded mozzarella cheese

    Preheat oven to 400°F. Place tomatoes with liquid in medium bowl. Add garlic, stuffing mix and water; stir just until stuffing mix is moistened. Set aside.

    Place chicken in 13x9-inch baking dish; sprinkle with basil and cheese. Top with stuffing mixture. Bake 30 minutes or until chicken is cooked through.

    I just serve it with a tossed salad.
