I use them in place of whole eggs in things like cake mixes, brownie mixes, pancakes, etc. Use 2 egg whites in place of 1 whole egg. Also I make spinach and mushroom omelets for breakfast sometimes. Sautee some spinach and sliced mushrooms in a little bit of heart healthy margarine for a few minutes til wilted, then add in 4 egg whites or so and let cook til it sets almost all the way. Shred some mozzarella or 2% cheddar on top, fold, and cook another couple seconds til set in the middle. Yummy.
