I need a recipe for cheesecake cupcakes.

I am making them for my daughter's treat for V-Day. I want the ones with the vanilla wafers on the bottom. I need about 20. Thanks for the help

    12 vanilla wafers (Nilla Wafers)
    2 (8 oz.) pkgs. cream cheese, softened
    1/2 c. sugar
    1 tsp. vanilla
    2 eggs

  • Line muffin tins with foil liners. Place one vanilla wafer in each liner. Mix cream cheese, vanilla and sugar on medium speed until well blended. Add eggs. Mix well. Pour over wafers, filling 3/4 full. Bake 25 minutes at 325 degrees. Remove from pan when cool. Chill. Top with fruit, preserves, nuts or chocolate. Be creative!

  • I do a no-bake cheese cake. I put it in mini-tart shells for my SIL's wedding. Super easy to make ahead, freeze, and thaw over night.

  • Buy a Jello no-bake cheesecake, mix it up and pour into the wafered liners immediately. Refrigerate.

  • I'm gonna second the jello no bake stuff. So much easier for the kiddy parties where they don't actually give a crap if you spent hours making it. JMO
