What do you think of a white cake with strawberry cheesecake filling???

My son's birthday is next weekend and I asked him what kind of cake he wanted. His reply was "something with strawberries!" I got to thinking about a cake I had a few months back, it was good. So I thought that maybe I could enhance the cake I had by using different ingredients (my family loves my homemade cakes because they are usually better than what you can buy at the store). Anyway, my thought is to do a white cake and then mash up some frozen strawberries into a cheesecake mixture and use that for a filling. What do you think? Anyone ever have a cake like this before?

  • Why not do a strawberry cake with a cheesecake filling? I saw a great strawberry cake recipe, I think in the cake 101 group.

  • Or you could do a giant strawberry shortcake.. Make it layer cake out of it.. YUM. Your idea sounds good also!

  • I don't think white cake & cheesecake would mesh well, but that's JMO.

    White cake with strawberries, and maybe a lighter pastry cream filling, yes.

  • For my sons last birthday I made a jello poke cake with strawberry cake mix and in the jello mixture instead of water I used frozen strawberries with strawberry jello of course, unfroze of course and covered it with whipped cream instead of frosting and but a small john deere metal dump truck on top filled with gummy strawberries.

  • I'd do a torte type layering with a cream cheese based strawberry pastry cream.

    Make 2 8 inch white cakes, cool them, then slice them in half-- you'll have 4 thin disks.

    Make a cream filling with 16 oz cream cheese, 1 cup sugar-- whip and incorporate heavy cream until it's a spreadable texture-- probably 5 oz. Then whip in chopped up strawberries-- frozen would be fine.

    Then I would layer the cake with the strawberry cream filling. I'd sprinkle it with powdered sugar and top it with fresh strawberries. 4 layers of cake, 3 layers of cream filling, fresh fruit on top-- you'd really impress the adults.
