My neighbour has brought me 5 little eggplants. They are the shape of a zucchini, about 12-15cm long, purple, I have no idea what to do with them. Any ideas??
Poke a hole in them and bake them till soft. Let them cool and peel away the skin and save the skin for sandwiches. Puree the meat of the eggplant with garlic and tahini paste and little olive oil....poof babaganoush. It's like hummus only its made with eggplant not peas.. You can make eggplant parmesan. Thats comparable to lasagna except you use the eggplant in place of the noodles.
