What did or is everyone having for dinner?

We had black beans with peppers, tomatoes, onions over brown rice and garlic roasted asparagus.

  • I made Teriyaki grilled chicken, noodles with peanut sauce and sesame broccoli. It was yummy!

  • We had eggplant parm at my MIL's and a really yummy salad she made with tangerines and all kinds of stuff with some kind of home made lemon zest salad dressing. It was amazing! She has really kicked her cooking skills into high gear since retirement and I am totally reaping the rewards!!!

  • mac and cheese with left over green beans and some nuked potatoes. ...a beer sounds good though. but i don't have any and i don't feel like going to the store to be one. Long week indeed. :)

  • That sounds good Bridget!! We had chicken that I slow-cooked in the crock pot all day with taco seasoning, tomatoes, and green chilis. I made guacamole, black beans, Mexican rice, and put out some sour cream and hot sauce. My husband loved it. I've never attempted Mexican food (I only recently started cooking, lol), but it was so delicious, and I am so proud of myself right now, haha. It was super easy too! I even made blueberry cheesecake muffins for dessert. :)
