how do I keep peeled potatoes from turning brown?

I a making a huge brunch including a "hobo skillet" with potatoes, eggs sausage and cheese. I want to peel the potatoes the day before, but how do you keep them from browning? thanks !

  • Stick a plate on top, or something to keep the potatoes submerged under the water. Anything sticking up will turn black!
