If a recipe calls for eggs can I make it without the eggs?

I want to make my kids some muffins but the egss I had are expired.

  • No, you can't make it without the eggs.

    Crack open the eggs one at a time into a separate bowl (not into the mix). If they aren't rotten (which smell HORRIBLE), then you can still use them. Expiration dates aren't a true "no longer usable" date.

  • You can substitute ground flax seeds and water.

    Here is the best way to test the eggs. Fill a bowl with water. If the eggs sink, then air has not seeped through the shells and they are fine; if the eggs float, toss them.

  • silken tofu or applesauce are good subs depending on the recipe
