anyone have a recipe for mexican casserole?

  • Cook 1lb of hamburger and drain. Mix in a small jar of salsa, 1 drained can or 2 cups frozen corn, about 1/3 cup miracle whip, and a packet of taco seasoning. Spread half in casserole dish. Top with 1 cup shredded cheese and about 1 cup crunched tortilla chips (plain, Doritos, whatever - my kids prefer plain tortilla chips, but DH & I prefer Doritos). Repeat layers. Bake til cheese is melted. Serve as is or topped with taco toppings - lettuce, chopped tomatoes, olives, more salsa, sour cream, avocado, whatever you like. I like to put Ranch dressing on mine as well ;).

  • I have a couple mexican casserole dishes. here is one for a side dish. If you need more, I have 2 chicken ones and a beef taco one too. I got them from campbells website/casserole book.

    Mexican Corn Casserole: (makes 6 servings)

    Ingrediants: Vegetable cooking spray, 1 can campbell's condensed cheddare cheese soup, 1 cup Pace Chunky Salsa (I have used different kinds of salsa), 1 bag (16oz) frozen whole kernel corn, thawed (about 4 cups), and 1 cup coarsely crushed tortilla chips

    1. Spray a 2-quart casserole dish with cooking spray. Stir the soup, salsa, and corn into the prepared dish. Sprinkly the tortilla chips over the corn mixture.

    2. Bake at 350 F for 30 minutes or until hot and bubbly. Serve immediately.

  • Mexican Casserole:

    16 oz. elbow macaroni, cooked and drained

    1 lb. ground beef, browned

    2 tsp. minced garlic, added to beef

    1 medium onion, chopped and cooked with beef

    16 oz. can diced tomatoes

    15 oz. can tomato sauce

    1 pkg. taco seasoning (or use my homemade recipe)

    1 cup sweet corn kernels (canned, fresh or frozen)

    1 small can sliced black olives (optional)

    8 oz. cheddar or mexican blend shredded cheese

    Put cooked macaroni in 9 x 13 pan. Combine rest of ingredients except for olives and cheese and put on top of macaroni. Top with cheese, then spread olives over the cheese. Bake at 350 degrees for 20 minutes.

  • This one isn't spicy hot but my kids love it.

    Salsa Beef & pasta

    1 lb. ground beef, browned

    16 oz. salsa

    2 c. water

    8 oz. elbow macaroni, cooked & drained

    1/4 lb. Velveeta, cubed

    Cook ground beef and add salsa and water. Bring to a boil and add macaroni. Reduce heat, cover and simmer for 8 to 10 minutes until macaroni is tender. Stir in Velveeta until melted.

  • a noodle casserole?

    the one i make that i know off hand is this: boil your noodles, next brown your hamburger and add your taco seasoning to your hamburger as directed, add a can or half a can of refried beans to your hamburger and let fry on low till your refried beans are soft. then add your noodles and refried beans mixture together in your serving dish and add as much as sour cream as you want to it and stir that into your noodle dish after its all put together!

    1 med. onion, chopped
    1 clove garlic, chopped
    2" segment hot chili pepper, minced or 1/4 tsp. cayenne
    1 tbsp. chili powder
    1 qt. undrained canned diced tomatoes
    1 tsp. oregano
    1/2 tsp. cumin
    1 c. uncooked whole wheat elbow macaroni or other pasta broken into pieces
    3/4 c. frozen or canned corn
    3/4 c. diced zucchini
    3 c. cooked pink or black beans (or two cans)
    1/2 c. sliced black olives
    1 c. broken taco shells or tortilla chips
    1 c. shredded Jack cheese or cheese of your choice

    In a skillet coated with non-stick cooking spray (I use olive oil) sauté onion, garlic and hot pepper for about 3 minutes to soften. Add chili powder and cook briefly. Add tomatoes, oregano and cumin and bring to a boil. Add pasta, corn and zucchini and simmer 15 minutes until pasta is just tender. Stir in beans and olives. Preheat oven to 325 degrees F.

  • Transfer bean mixture to a shallow 2 quart casserole. Top with taco shells or tortilla chips and cheese. Bake for 10 minutes to melt cheese. If casserole is assembled in advance and chilled, increase baking time to 20 minutes or until heated through. Top with sour cream at the table.

  • This one is kind of like a Mexican style Shepherd's Pie. Brown a lb. of ground beef with diced onion and garlic. Drain it and season it (or not) if you like with chili powder, cumin and pepper. Place in a greased 13 x 9" baking dish. Evenly spoon 1 or 2 cans of beans (pinto, black beans, kidney beans or any combo of these). I use 2 since I like a lot of beans. Pour a jar of your favorite salsa evenly over beans. Drain a can of corn and spread this over the salsa (or you can use 2 cans of the Mexicorn, the corn with peppers in a smaller can) Top with some shredded cheddar cheese, as much or as little as you like. Mix up a package of cornbread mix. I add about 1/2 c. of shredded cheese to the mix, I like it cheesy! Then bake at 400 for about 20 minutes until heated through and toothpick inserted into corn bread layer comes out clean.
