Ideas for side dishes & Dessert

I need ideas for Sunday dinner. I plan on making Pork Chops with Rasberry Vinaigrette sauce. I need ideas for 2 side dishes that would go well with that. And I also need an idea for a light healthy, yet yummy, dessert.

Also, if I buy the pork chops today (friday) should I refrigerate or freeze them to keep them good til sunday?

  • How about some roasted potatoes and roasted veggies and you can drizzle the sauce on them as well..Or good old rice and a salad. I would just buy them tomorrow night then just in the frig.

  • They will be fine refrigerated. For a side dish what about baked macaroni and cheese or garlic mashed potatoes. As for dessert you could do a parfait, or a pineapple upside down cake. If you like fruity cakes I would do a humming bird cake. Good stuff.

  • I cant buy them tomorrow unfortunately. We only have one car and my husband needs it for work all day tomorrow, so I wont have a way to the grocery store. Otherwise, I agree it would be easier to just buy them tomorrow...but oh well lol.

  • you could refrigerate them until sunday. i love to saute green beans so maybe try that. you can do it with fresh beans or can or frozen. and maybe some fried rice would be good or whole grain rice. i love making homemade fruit cookies for kids love cookies and they dont know that they are healthy.

  • Roasted potatoes with green and red peppers, onions, garlic and herbs. Green beans steamed with garlic and onions is good. Spinach salad with a light vinegrette dressing. Roasted aspargus is very yummy and very easy.

  • Oh, instead of a salad, you can do wilted lettuce. My grandmother used to cook bacon til crispy, break it up into small chunks, pour vinegar into the bottom of a sauce pan and heat, add bacon crumbles, and pour over green leaf lettuce until lettuce "wilts". Yummay!

  • We love mashed potatoes here... but I add bacon cheese sour cream and chives to mine...Also some roasted pepper with greenbeans sounds good.
