I remember hearing that if you cook sausage too long it emits something harmful I think because of the nitrates? Does anyone know about this is?

  • most sausages are made with nitrates, which are highly carcinogenic and a major migraine trigger.

  • yes, i do recall hearing this. you can get meats without nitrates, though.
