Low Carb Chicken Recipes

My husband said today he would like to start a low carb diet and work out plan. He has gainned alot of weight in the last year and its getting unhealthy so I agreed. He loves chicken and I already have a freezer full of chicken breast that I use many times a week for meals. Anyone know of some good (simple) low carb meals using chicken? I say simple b/c I have kids running around none stop making it hard to tend to a very detailed meal.

and i've never done a low carb diet so any little tips you have would help me in cooking for him. i'm not too sure where to start with it.

  • any chicken that you would bread with crumbs, bread with seasoned bisquick or flour....also try marinading your chicken instead of breading it...nothing is better than marinaded grilled chicken

  • Top chicken breasts with salsa & bake them 40 minutes at 350.

    Here's a recipe my whole family loves, I have to make double the recipe: 

    I also bake chicken breasts, then top with a homemade spaghetti sauce (no sugar).

    Low carb doesn't mean no carbs. Low carb diets avoid breads, pasta, & rice, most cereals, no chips or crackers, & limit starchy veggies like sweet potatoes, white potatoes, corn, peas & winter squash. Consumption of fresh fruit & whole grains & high fiber cereals (above 7 g fiber per serving) are allowed but are limited.  We eat plenty of steamed & fresh veggies & a serving of lean protein at each meal.  No butter, no fatty meats.
