What can I take for the pot luck?

My school is having a pot luck lunch this saturday and I want to bring a variety of desserts. I would like to make everything in a cupcake pan if possible so there ewill be individual servings. Any ideas?

  • Dump Cake (not sure if it will work in a cupcake pan)

    1 box yellow cake mix
    2 sticks butter (not margarine)
    1 lg can cherries
    coconut flakes

    What to do with it:
    Dump out the cherries into the bottom of a 9x11 cake pan (or lined cupcake pan?)
    Crumble cake mix evenly over the cherries.
    Drizzle melted butter over cake mix
    Top with coconut flakes
    Bake at 350 for 25-30 minutes until slightly browned

    This tastes really good with whipped topping or vanilla icecream.

  • cheesecakes work in cupcake pans, red velvet cake, mini pineapple upside down cakes, banana bread or other muffins

    • 1 can (15 oz.) Libby's Pure Pumpkin (or equivalent solid canned pumpkin)

    • 3 large eggs

    • 1/3 cup vegetable oil

    • 1/3 cup water

    • 1 (16 oz.) container prepared cream cheese frosting
