Does anyone have a low calorie healthy sweet dessert recipe?

  • I got this recipe from my South Beach Diet book:

    Almond Ricotta Creme

    1/2 cup part-skim ricotta cheese
    1/4 teaspoon almond extract
    1 package of Splenda (sugar substitute)
    1 teaspoon slivered toasted almonds

    Mix together, sprinkle with almonds--192 calories

    Can also use vanilla extract to make a Vanilla Ricotta Creme--178 calories, OR add 1/2 teaspoon unsweetened cocoa powder, a dash of espresso powder and 5 mini chocolate chips for a Mocha Ricotta Creme that has 261 calories!

  • Strawberry Jello Pie

    1 small box of strawberry jello
    1/4 cup boiling water
    1/4 cup room temp water
    1 tub lite cool whip
    1 premade graham cracker crust
    fresh strawberries for the top

    Mix the box of jello with 1/4 cup boiling water to dissolve. Once all dissolved, add 1/4 cup room temperature water (or less if it looks too watery) and mix well. Let it cool back to room temp if it's too hot. Fold the liquid jello into the the cool whip slowly. Once it is all mixed together, scoop into your crust and put it in the fridge to set. Add fresh strawberries and serve! It tastes like a quick strawberry mousse...light and fluffy!

  • My sister likes to take Cool Whip Lite and spread it between 2 low fat graham crackers, then freeze it for a few hours. It's like a low fat ice cream sandwich. I've had it before and it's pretty good. I normally just do frozen watermelon cubes though. SOOOO yummy!

  • I've bend blending frozen berries with a little juice in the food processor to make instant "sorbet."

    Blueberries with pineapple juice is awesome!!! Strawberries with banana and a little OJ is really creamy bc of the banana.

    Cool Whip is not healthy. It's non-food, only chemicals.
