ground beef or turkey, meatloaf seasoning mix, onions, and green peppers, sometimes I top it off with spaghetti sauce and mozzarella cheese

I just came up with a kick butt recipe a couple of weeks ago. 1/2 lb ground beef (80/20), 1/2 lb ground pork, 1 lb ground buffalo. Then a small can of tomato sauce, 2 eggs, and about a cup of bread crumbs. Then I dice 2 yellow onions, a green bell pepper, a yellow bell pepper, and a couple cloves of garlic. I saute them in a little olive oil. Then I add it to the meat mixture with some salt, pepper, and worsteshire sauce. I mold it into a loaf on a baking sheet and lay a couple strips of bacon on top. Bake the whole thing for about 1 1/2 hours, or until done. mmmmmmm......

I live in Colorado. Buffalo is as plentiful and easily available as beef. It is also a lot better for you.
