If the weather is nice, I'd start a garden with the kids, even if it's not you could get seeds started inside the house, ready to transplant when it gets nicer. I don't know how old your kids are, or if they are boys or girls, but a week of spring break is a great time to get some books and learn a new skill, sewing, cooking, painting, making kites, there are so many new things to learn. Or maybe read some books with your kids that you loved when you were there age. Picnics are great.
What about working on scrapbooks together. It's fun to go through the pictures of your kids when they were younger and talk about the pictures while putting together new pages in scrapbooks.
