  • This is our favorite jelly roll:
    3 eggs
    1 c. white sugar
    1/3 c. water
    1 tsp. vanilla
    3/4 c. flour
    1 tsp. baking powder
    1/4 tsp. salt
    favorite jelly or jam
    powdered sugar
Line 15x10x1 inch pan with aluminum foil and grease generously. Preheat oven to 375 degrees.
Beat eggs in mixing bowl on high speed until thick and lemon colored, about 5 minutes. Gradually beat in sugar, beat in water & vanilla on low speed. Gradually add flour, baking powder & salt, beating just until smooth. Pour into pan. Bake until toothpick inserted in center comes out clean, 12 to 15 minutes. Immediately loosen foil & turn cake out onto a towel sprinkled generously with powdered sugar. Carefully remove foil. Trim off stiff edges of cake. Carefully roll the hot cake & towel from the narrow end. Cool at least 30 minutes on a rack. Unroll. Stir jam or jelly with fork to soften; spread over cake. Roll up the cake again & sprinkle with powdered
