  • Get a rotisserie chicken from the grocery store, cut it up into chunks or shred it (I usually only use the white meat). Add .5 - 1 cup mayo, a little salt, pepper, dill, onions or onion powder, celery/celery flakes, and some toasted almonds. It's pretty good!

  • I just found a recipe that I LOVE, and I'm not a chicken salad person, I take some bone in chicken breasts, bake at 350 for about 45 mins, pick off all the meat, stir in about 3/4 c mayo, celery, green pepper, dried cranberries, paprika, chopped pecans, green onion, salt and pepper....omg so good! Maybe not so simple though....

  • shredded chicken breast (you can cook it ahead of time)
a little bit of finely chopped onion and celery
    halved red grapes
    toasted pecans
I mix a little chicken broth with the mayo before dressing the salad so that it's not so thick.
