  • This is my favorite comfort food. Kind of like a Mexican style sheperd's pie. I make it with leftover ground beef from tacos or chili or whatever I have on hand. Very easy and versatile.

Ground beef and onion browned together.
Jar of salsa or mexican tomatoes (whatever you have on hand or prefer)
2 cans of beans (I use pinto beans)
As much shredded cheese as you like. (We love the Mexican 4 cheese blend)
1 can of corn, drained (or 1 small pkg frozen corn, thawed)
1 pkg of corn muffin mix, mixed accoriding to directions
Layer in a casserole dish in order listed. Bake at 350 until toothpick inserted into corn bread comes out clean, about 35-40 minutes.

  • I saute a diced onion then add hamburger. Drain. Add a can or two of diced tomatoes with green chilies. Simmer for about 5 mins. Serve with white rice or egg noodles. and top with shredded parmisan cheese. My kids love this. You can serve it with corn. Sometimes the kids will mix the corn in with it.
