  • Made this tonight and it was delicious:

    Sloppy Joe Casserole

    1 lb lean ground beef
    1 small chopped onion
1 packet sloppy joe seasoning mix
    1- 6 oz tomato paste
    1- 8 oz tomato sauce
    1 cup water
1 cup small curd cottage cheese
    1 cup shredded sharp cheddar
7 ounces small shell pasta, cooked

Brown beef and onion, drain. Stir in water, sauce, paste and seasoning mix. Bring to a boil, reduce heat and simmer of about 10 minutes. Stir in cooked pasta. Pour half of pasta mixture into a greased 2 and 1/2 quart dish, spread cottage cheese in even layer over top. Pour reamaning pasta over top and cover with cheddar cheese. Bake uncovered at 350 for 30 to 35 until bubbley.

  • Brown ground beef with chopped garlic and onions, drain. Return to frying pan, add a can of shoepeg corn, shredded cheese and tomato soup. Mix well. Top with leftover mashed potatoes and shredded cheese. Cover and let cook until the potatoes are heated through. You can also put the meat mixture in a casserole dish, top with potatoes and cheese and bake at 350 for about 30 minutes.

Swedish meatballs, tacos, meatloaf, meatloaf burgers. Hamburger gravy over buttered noodles, rice or mashed potaotes. Just make a sausage gravy but use ground beef in place of the breakfast sausage.
