Wonton wrappers are made like pasta dough-- they have egg. The dough is more pliable and tear resistant. It can stand more abuse.
Pie crust is a shortbread that has been rolled very very thin with no leavening. The dough will bubble up much more crisp but may crack. Work carefully and don't over work the dough if you are going to may the substitution.
