  • I like to make things that can be prepared entirely ahead so that my kitchen is clean, and all I have to do is serve. Such as:

Lasagna, Salad, garlic bread, and a dessert

Chicken Enchilada Casserole, spanish rice, and salad, and a dessert

Meatball sandwiches, pasta salad, fresh fruit

Or, do a finger food dinner with appetizers, veggie platter and fruit platter, maybe mini cheesecakes, or cookies for dessert

A pot of chili, cornbread and a salad with brownies or cookies for dessert

Maybe a baked potato bar...potatoes baking when they get there, but all the toppings ready such as chili, veggies with cheese sauce, etc., again salad and dessert

Something you feel confident serving....then just have fun!

  • I'd either do a bunch of appetizers and cosmos, and certainly something fabulous for dessert, or a pasta dish with salad and bread and wine....and again, something fabulous for dessert. Pastas I might do would be spaghetti with sausage sauce, traditional or white lasagna, pesto pasta with chicken and sun dried tomateos, or my all time favorite pasta dish, cajun chicken pasta, drooling.
