I stuff them with anything I would put in a sandwich for the most part. I love stuffing them with chicken ceasar salad, or I'll make a filling like for Calzones w/ Ricotta cheese, an egg, some sauteed spinach, garlic, & a little mozarella, & mix that up well. Stuff it into the calzone, add some pepperoni, or meat sauce if you want, & bake for about 15 -20 minutes, then serve w/ marinara sauce for dipping....makes a yummy quick & easy cazlone, they also work as a pizza crust.
As for greek, I love filling them with a some chicken schwarma, or grilled shredded chicken, lettuce, tomatoes, cucumbers, some feta cheese & a little garlic sauce. They work great for felafels, & you can even buy a mix for that though their easy to make. I put tabouleh, a salad of cucumbers, cilantro, green onions, & tomatoes & felafels in the pita, top it with a little tahini sauce. Usually, I cut them up & serve w/ babaganoush, & hummus for dipping.
