Any good recipes involving chicken legs?

  • You can cook this in a crock pot, or even in a pan in the oven, or in a pot on the stove - my favorite is in my cast iron dutch oven over a campfire ;). Put in the legs, drizzle with olive oil. Throw in a pound of baby carrots for every few legs - I usually go pound for pound. Cut a few stalks of celery into 2 inch peices and throw in. Chop up an onion (or 3) and throw in - I usually just quarter them and take the layers apart. Cut a few potatoes into big chunks and add - I don't always add them. Throw in a ton of fresh garlic - I leave the cloves whole so they're milder & sweeter. Throw on a bunch of parsley (fresh or dried), a little salt, black pepper, if you have a favorite Mrs Dash some of that, and any other seasonings you like with chicken. Get your hands in and mix it all up. Add a cup of water. Cook til done. I do it for 6 hours over a low fire ;). Serve with rice if you don't use potatoes. Comes out stew-like, yummy!

  • Chicken Drumsticks Pierre
    * 1/4 cup flour
    * 1/2 tsp. salt
    * 1 dash pepper
    * 8 chicken drumsticks
    * 3 Tbsp. butter
    * 1 (14 1/2 ounce) can tomatoes
    * 1/2 cup water
    * 2 Tbsp. brown sugar
    * 2 Tbsp. vinegar
    * 2 Tbsp. Worcestershire sauce
    * 1 tsp. salt
    * 1 tsp. chili powder
    * 1 tsp. dry mustard
    * 1/2 tsp. celery seed
    * 1 garlic clove, minced
    * 3-5 drops hot pepper sauce
    Mix together the flour, salt and pepper. Dust the drumsticks with the seasoned flour. Melt the butter in a skillet with a lid. Brown the chicken over medium heat on all sides. Remove the chicken from the pan and drain on absorbent paper. In the same pan, combine the tomatoes thru hot pepper sauce; bring to a boil. Reduce the heat and return the chicken to the pan. Cover and simmer about 45 minutes. Serve with pan juice. Good over white or brown rice.<

  • Grilled Chicken Legs
    4 chicken leg quarters, split into drums/thighs if desired
    * 1 teaspoon sugar
    * 1 teaspoon seasoning salt
    * 1 teaspoon paprika
    * 1 teaspoon pepper
    * 1 teaspoon garlic powder
    * 1 tablespoon olive oil
    Mix all marinade ingredients in a zip lock bag add chicken. Chill and marinade for 4 hours. Grill chicken over low/medium heat on a well oiled grill until well browned on all sides, turning once, 30 to 40 minutes (meat near thigh bones should no longer be pink when tested with the tip of a knife).

  • Chicken & Rice Casserole

    * 8 pieces chicken drums or thighs or combination
    * 1 can cream of mushroom soup
    * 1 to 1 1/2 soup cans water
    * 1 Tbsp. dry onion flakes
    * 2 tsp. beef boullion
    * 1 cup long grain rice

    Wash chicken pieces (I prefer to remove the skin too). In 9 x 13 pan or baking dish, combine the rest of the ingredients and mix well. Add chicken pieces. Cover with foil and bake at 350 degrees for 1 hour.

  • Oven Fried Chicken:

    * 3 to 4 lbs. chicken parts (breasts, thighs, drums),
    * 1 1/2 c. mashed potato flakes,
    * 1 Tbsp. parmesan cheese,
    * 1 tsp. paprika,
    * 1 tsp. garlic salt,
    * 1 tsp. salt,
    * 1 tsp. pepper,
    * 2 eggs,
    * 1/2 c. margarine.

    Mix potato flakes, cheese and spices together. Beat eggs and 2 Tbsp. water with fork. Dip chicken pieces in egg mixture then roll in mashed potato flakes mixture. Place in a foil lined cake pan. Melt margarine and pour over chicken. Bake at 375 for 30 minutes, turn chicken pieces and bake another 30 minutes.

  • Country style Oven fried Chicken:

    1 c. flour

    2 tsp. garlic salt

    2 tsp. pepper

    1 tsp. paprika

    1/2 tsp. poultry seasoning

    1/2 c. milk

    1 egg, beaten

    2 to 3 lb. chicken parts

    In a large bowl combine the dry ingredients. In another bowl whisk together milk and egg. Roll chicken in flour mixture, then dip in egg mixture and roll again in flour mixture. Heat about 1/4 to 1/3 c. vegetable oil in a large skillet. Fry chicken in batches until golden brown on all sides, about 5 minutes. Put chicken in a large cake pan. Bake at 350 degrees for 35 minutes or until juices run clear.
