Veggie burger recipe that isn't mostly black beans?

I can handle them... they just aren't my favorite. But I want something good! That you can eat with or without the bun!

  • veggie burgers are nasty. just get some real burgers ... or chicken sandwhiches or something

  • I haven't tried these yet:

    * 1 small zucchini, grated
    * 1 medium raw potato, grated (peel if you wish)
    * 1 medium carrot, grated
    * 1/4 cup grated onion
    * 3/4 cup egg substitute
    * salt and pepper

    Directions

    Combine all ingredients in a bowl.
    Mix well.
    Pour 1/2 cup batter on hot griddle lightly coated with cooking spray.
    Fry for 3 minutes each side.

  • Here's another one using white beans:

    * 1 cup cooked pureed white beans, including some liquid or beans, of your choice (try Bush's baked vegetarian beans!)
    * 1 cup cooked brown rice (try yellow rice!)
    * 1/2 cup uncooked quaker multigrain cereal (or oats)
    * 1 cup cornbread stuffing mix (Pepperidge Farm is good)
    * 1 tablespoon parsley
    * 1/2 cup chopped onion
    * 1 tablespoon soy sauce
    Mix ingredients all together.
    Shape into patties.
    Fry on low heat in olive oil, till each side is browned.
    Serve with lettuce and tomato and grilled onions on a bun, with your favorite toppings.

  • This is my danish recipe for Beet Burgers, which is also why some of the mesurements are in grams....but it's quite good :)

    1 Giant beet (peeled and schredded, I ended up w/ 270 g.) - 70 g. Sunflower seeds (quick roast on dry skillet, then chopped) - 1 Onion (finely chopped) - 1 handful capers (chopped) - Juice of 1/2 lemon - 1 tbsp. graham flour - 3 cloves garlic (chopped) - 2 tbsp. whipping cream (could be soy) - celery salt + pepper - 1 egg

    Mix well, shape into burgers cook on skillet or put into silicon muffin shapes and bake in oven @ 325-350 for 30-35 min.

  • What about using the big mushrooms - I can't remember what they're called but I've seen them grilled and served as "burgers" - portabello maybe? Or what about the Boca ones, or other frozen veggie burgers? Sorry if that didn't help, I eat real beef burgers!
