Green chile chicken enchiladas (if you don't know what green chile is then you aren't from around here - NM and that's ok)
Cook chicken, while it's cooking (I usually boil it), cook some onion in a little olive oil add some garlic, add 2 cans of cream of chicken, 1 can cream of mushroom, some cream cheese, when chicken is done add that, dip corn tortillas in mixture one at a time, layer them and the mixture in a cake pan (rectangular) on the top sprinkle some cheese. Cook at 350 for 20 - 30 minutes. Total time to get into oven about 15 - 20 minutes, then another 20 - 30 minutes cooking, not fast if you are talking from time to start to eat but to me less than 30 minutes to get something in the oven is quick!
Make chicken tacos! Instead of hamburger use shredded chicken, don't change anything else, VERY quick.
