quick easy mexican food, with chicken?

any ideas?

  • cook chicken, make instant rice, add drained can of mixed veggie and soy sauce. Not mexican but quick and yummy

  • chimichangas! so easy! boil some bone in chicken breasts, let cool and debone it basically into shreds. Mix with a little Chipotle Lime marinade found with the other condiments at the store, about 1 tbsp cream of chicken soup. Roll in tortillas, and brown in some hot oil on both sides. Serve your basic condiments such as quacamole, sour cream, cheese, etc.

  • Green chile chicken enchiladas (if you don't know what green chile is then you aren't from around here - NM and that's ok)
    Cook chicken, while it's cooking (I usually boil it), cook some onion in a little olive oil add some garlic, add 2 cans of cream of chicken, 1 can cream of mushroom, some cream cheese, when chicken is done add that, dip corn tortillas in mixture one at a time, layer them and the mixture in a cake pan (rectangular) on the top sprinkle some cheese. Cook at 350 for 20 - 30 minutes. Total time to get into oven about 15 - 20 minutes, then another 20 - 30 minutes cooking, not fast if you are talking from time to start to eat but to me less than 30 minutes to get something in the oven is quick!

    Make chicken tacos! Instead of hamburger use shredded chicken, don't change anything else, VERY quick.

  • oh what I would do for some hatch green chile right about now! yummmm...

    fajitas are pretty quick too, season chicken, grill (outside grill, pan grill or george foreman all work), cut into strips, add peppers onion, cheese and sour cream. I like my peppers and onions grilled too but it's not absolutely necessary.

  • those bag chicken strips, some boil in bag rice, and taco seasoning. maybe dice up some green onion to make it look pretty once the rice is cooked and you mix it all together and get it hot. very simple, and gets good reviews! shredded cheese and sourcream optional, lol. add some tortilla wraps, and you have a burrito also.
