  • This may seem like a lot of work but my kids claim it's the best:
    2 1/4 c. - 2 1/2 c. uncooked elbow macaroni
    1/4 c. butter or margarine
    2 large garlic cloves, minced
    1 tsp. onion powder
    1 tsp. dry mustard
    1/4 tsp. cayenne pepper
    3 Tbsp. flour
3 c. half & half, milk, or evaporated milk
1 1/2 c. shredded cheddar (we like sharp)
16 oz. Velveeta, cut into small cubes
    salt & pepper to taste
    1/2 c. grated parmesan cheese
Preheat oven to 350 °F. Grease a medium casserole dish. Cook pasta until al dente; drain but do not rinse. Place in a bowl & mix with an extra 2 Tbsp. butter; set aside. Melt 1/4 c. butter in large saucepan over medium heat. Add garlic, onion powder, mustard, & cayenne pepper; stir with a wooden spoon for 3 to 4 minutes. Add flour & stir for 1 minute. Slowly add half & half/milk & cook, stirring constantly over medium heat until bubbly and thick. cont.....

  • Reduce heat & add in cheddar and Velveeta; mix until melted and smooth. Season with salt & pepper to taste. Add to the cooked pasta and mix to combine. Pour into greased casserole dish, sprinkle with parmesan cheese. Bake for 20 to 25 minutes.
