Don't slice your onions too thin, or you'll have a heck of a time. Also remove that thin membrane between the layers of onion & your stuff will stick to the onion better. For the coating, its whatever you want. Toss rings in flour, then dip in a beaten egg, then dredge in a mixture of flour, cornmeal, a bit of salt & pepper. Then fry them up.

I soak the onions in buttermilk for a few hours after slicing them. Then Let them drip dry and dredge them in flour with salt and pepper. Then fry.
