  • Don't slice your onions too thin, or you'll have a heck of a time.  Also remove that thin membrane between the layers of onion & your stuff will stick to the onion better.  For the coating, its whatever you want.  Toss rings in flour, then dip in a beaten egg, then dredge in a mixture of flour, cornmeal, a bit of salt & pepper.  Then fry them up.

  • Here's what we use:
    * 1 egg
    * 1/4 cup vegetable oil
    * 1 cup milk
    * 1 cup flour
    * 1/2 teaspoon salt
    * 1 teaspoon baking powder
    * 2 large sweet onions, sliced 3/8" - 1/2" thick
    * 1/2 cup flour (for coating onions)
    * oil (for frying)

    Mix egg, oil, and milk on low speed of mixer for 1 minute. Add dry ingredients and mix until smooth. Coat onions in flour. Dip in batter. Fry in hot oil 375* until desired shade of brown.

  • I soak the onions in buttermilk for a few hours after slicing them. Then Let them drip dry and dredge them in flour with salt and pepper. Then fry.
