  • Today we are having Grilled pork Tenderloin, roasted red potatoes with onion and garlic, and spinach. Some of the dinners that make my usual rotation are: Tacos, spaghetti, roasted chicken, various stirfry's, baked fish, meatloaf, stuffed chicken breast, and more that I can't think of at the moment.

  • If you haven't done this... it's a GREAT easy dinner.

    Sweet n sour pork/chicken

    *Chicken/pork cooked chopped.
*Can/jar of pre made sweet n sour sauce ( sold in oriental/mexican isle... maybe by the rice)
    *Bell peppers any color (optional)
    *Onions (optional)
    *Can Pineapple or fresh

Mix cooked pork or chicken with sweet n sour sauce and pineapple. in pan, heat it up. : ) Add any veggies you want. broccoli bell peppers, anything.....

You can serve over rice if wanted.

This meal is surely under $10 if you want it to be. Great meal to have guests over for. : ) Kids love it especially if you let them help you cook it by letting them pour something or stir something. :)

  • I bought me a new crock pot so I have been cooking a lot of new things lately.. hillbillyhousewives.com has great receipts for the crock pot and you don't have to slave over the stove all day.. Tonight I am doing a BBQ pork loin with rice, the other night I did a roast, tomorrow night I am doing beef stew and have a whole chicken for lemon-herb chicken in the crock pot. So far everything has been good. I also love taco's, baked spaghetti, meatloaf, baked chicken with garlic potatoes, and sometimes we do just baked potatoes with butter, sour cream, bacon bits and cheese sauce, it is big enough for the meal LOL..

  • I made a list of over 60 meals that my family will eat and I choose from them. I really try to keep a variety during the week, like 2 - 3 nights will be a chicken night (grilled, sandwiches, homemade strips, fried, baked, casseroles, stir fry, roast, etc), 2 - 3 nights will be a beef night (burgers, casseroles, roasts, stir fry, etc), 1 - 2 meatless meals (taco soup, mexican lasagna, refried bean tacos, bean burritos, quiche, cheesy stuffed shells, eggs with Spanish rice, etc), and maybe a miscellaneous night (pizza, corn dogs, etc.)
