What can I do with leftover Salmon?

I am curious for some ideas on what to do with the leftovers...

  • Mix it with a white alfredo or other cream sauce and serve it over pasta.

  • Mix it with mayo and make salmon salad sandwiches.

    Salmon tacos-small corn tortillas, shredded cabbage, shredded cheese of your choice and diced tomatoes (or salsa).

    Cowboy cassarole .. Which is cubed potatoes, cream of chicken (or mushroom) soup and meat. Bake at 350 for 30 minutes.

  • Depending on how much I have, I'll make salmon patties out of it. Sort of like making meat loaf...onions, celery, some type of "crumbs" (I've used soda crackers, soft bread crumbs, dry bread crumbs....even used some smashed up rice chex once) an egg, and usually some type of seasoning, either what I have on hand...or just some dill and/or parsley. Then I make them into patties, about the size of a small hamburger patty...if I'm feeling energetic I'll even dip them into some seasoned flour and then fry them. Not too long though...and serve them with ranch dressing.
    I've made them just using a can of salmon, or mackeral too. They're pretty good.
