What are your favorite camping foods?

We are having a big family camp out next weekend and I have to bring food for 15 people for an entire day. Breakfast, lunch, dinner and snacks. I am planning on making breakfast burritos in advance and wrapping them in foil, so when it is time to eat them we can heat them up near the fire.
But I am not sure what to bring for lunch and dinner.

So what foods do you eat when camping?

  • We make the Hobo meals in the tin foil pockets that can be set on a grill over the fire and we always bring hot dogs and heat up a pot of chili to go with them. We bring potato salad and fresh fruits to eat the first day we go camping. We ALWAYS have s'mores....yum!

  • Oh I am a great campfire cooker. If it can be made on your stove top, you can do it over a fire. My favorite is Chicken Fajitas!

  • My favorite camping meals for crowds:
Breakfast: scrambled eggs (I do them in a high-sided electric frying pan, easily holds 3 dozen eggs) OR Ziploc omelettes (2 eggs & pre-cooked fillings in a 1-quart Ziploc brand freezer bag sealed with all air squeezed out, boil a huge pot of water and cook baggie omelettes about 10 minutes, sharpie marker with name on it), pancakes, sausage and/or bacon if doing scrambled.

    Lunch or dinner:
~burgers and/or hot dogs over the fire and/or on the grill. Crock pot of baked beans. Fresh fruit/fruit salad (we take whole melons & cut up as needed).
~hobo meals - square of foil, set out hamburger, cut up potatoes or frozen hashbrowns, veggies, cheeses, soups (tomato, cream of mushroom/celery), etc - everyone makes their own, sharpie marker names, cook in coals/over fire/on grill.
~cast iron dutch oven - over the fire, works like a crock pot, roast, chicken, veggies, whatever. Mmm good.

  • My DH makes great stew packets. He puts baby potatoes and seasoned ground beef in aluminum foil packets, and cooks them on bricks close to the campfire.

We season the meat from home and keep 'em in a cooler on ice - wrap up the packets @ dinner time and put them on the bricks and then sit down w/ a cold one while they cook for 20-30 min. YUM :)
