  • My favorite thing to do is make the spirals (the colored ones make the pasta salad more pretty) and I make my own italian dressing (you can buy the dry hidden valley packs, but I use Kroger brand and just mix it with olive oil, vinegar and water) and then pour it over the pasta once its cooled and then add some chopped olives. Oh wow, now I'm craving that, but I have to leave for work soon and don't have time to make it right now, so maybe for dinner! lol

  • I love Greek pasta salad. I use a box of the tri-color rotini, chopped tomatoes, kalamata olives, pepperoncini, thinly sliced red onion, and crumbled feta cheese. You can add anything else you like to it (mushrooms, artichoke hearts, chicken breasts chunks, diced red pepper etc.) Here is the dressing recipe:

    Greek Dressing
    2 cloves garlic, finely minced
    2 T. Greek yogurt
    1 t. dried oregano
1/4 c. extra virgin olive oil
    sea salt and fresh pepper
1/3 c. red wine vinegar (or lemon juice)
Combine all ingredients except for oil and yogurt. Add the oil in a slow steady stream while whisking. Then add yogurt a bit at a time while whisking. This will create an emulsion so dressing will hold together.

  • I like to use whole wheat rotini, combined with chopped peppers, finely chopped celery, green onion, tomatoes and either diced chicken or tuna with an oil and vinegar dressing. Low fat and high nutrition. I don't have a recipe--I just throw it all together. :-)
