Question about corn tortillas

Any secrets on how to keep these things from breaking?? I got some to make my enchiladas with because I LOVE the flavor of corn tortillas but they break so easily when you try to roll them!

  • Wrap in a paper towel that is moist an nuke for about 20 seconds,,they break because they have dried out in the package, Now how do you make your enchalidas? I am always looking for gooe mexican food!

  • here's the secret you actually have to do a shallow fry on corn tortillas not until they are crunchy but just plyable...I use flour tortillas 1 minute in the microwave you really want tortillas steamed and really soft my mother in law is mexican and taught me this it makes things so much easier I have to add.

  • yep shallow fry them. It gives you a little more time to get them rolled also, this is especially good, if it's your first time making enchiladas.... My son helped me a couple weeks ago, and had I heated them in the mic, they would have been hard again by the time he was done! lol

    Here is a copy and paste of the sauce recipe I usually go by! It comes out great!! I alternate with either hamburger beef or chicken

    3 oz ground New Mexico Red Chile Powder
    2 tblsp bacon drippings
    2 tsp all purpose flour
    1 garlic clove, minced
    Salt & pepper to taste
    1 tsp. paprika
    2 cups water
    1 pkg beefy onion soup mix

    In Dutch Oven
    Add bacon drippings, flour, garlic
    Brown quickly
    Add chile powder, paprika
    On low heat, stir for 2 minutes
    Add soup mix and water
    Stir until mixed well, then cover and cook on low 2-3 hours
    Carefully puree in blender until smooth
