Who knows how to make German Potato Salad?

My SO doesn't like regular potato salad, but he had German potato salad at a friends anniversary, and he really liked it. We are having a couple of friends over Sat. night and we got some steaks for the grill. I would like to try to make the potato salad for him. Don't you normally serve it warm??

    Hot German Potato Salad
    9 to 10 medium potatoes, peeled, cubed, boiled until just fork tender, keep hot
    6 slices of bacon, cooked and crumbled, save 2 Tbsp. drippings
    1 medium onion, chopped
    2 Tbsp. flour
    2 Tbsp. sugar
    2 tsp. salt
    1/2 tsp. celery seed
    1/4 tsp. pepper
    3/4 c. water
    1/3 c. vinegar
    1 - 2 Tbsp. pimentos (optional)

    Cook onions in 2 Tbsp. bacon drippings until lightly browned. Blend in flour, sugar, salt, celery seed and pepper. stir over low heat until mixture is bubbly. Remove from heat and whisk in water and vinegar. Bring to a boil and boil & stir for 1 minutes. Add bacon and pimentos, carefully stir in potatoes. Heat through, stirring carefully. Serve hot.

  • I've never made it but I do know that it's made with brown mustard instead of mayo and it is served warm instead of cold.

  • You can keep it hot in a crockpot once it's made.

  • Thank you michiganmom!! I really appreciate it. I've written down the recipe. I will have to make it tomorrow, since I have to work on Saturday, and I will put it in the crockpot to keep it warm.
