Summer Appetizers?

I've got a load of great hot dip, baked brie, warm-type appetizer recipes for winter, but what's good to serve on a hot day?

  • Mango salsa!
    2 ripe Mangos - peeled and chopped
    1 small red bell pepper - chopped
    1/4 cup fresh cilantro - chopped
    juice of 1 lime
    2-3 jalepinos (I prefer 2) seeded and chopped. (Use protective gloves to handle) ( I don't know how to spell jalapino!)
    3 chopped green onions.
    Mix all together and let sit a few hours in refrigerator. I like it sitting all day, but you don't have to wait that long. Serve with tortilla chips or whatever you like.

  • Bruschetta is good - especially if you've got a garden to pick your veggies from! Chop tomatoes. Marinate in a mix of garlic salt, balsamic vinegar, basil and olive oil. Slice a loaf of Italian bread. Place each slice flat on a baking sheet. top with the the tomato mixture. you can serve it like this OR you can sprinkle some shredded mozzarella on it and broil it for a minute or two until the cheese melts. We also mixed diced fresh herbs (basil, oregano and thyme) with ricotta cheese and finely diced garlic cloves. Spread a little of that on each slice of bread, then sprinkled a little of the mozzarella on top and broiled it.

    You can grill up veggie pizza - reg dough rolled out to a disc. Brush your grill with olive oil. Place dough down on grill for 5 minutes. Flip it. Pop the any bubbles. Layer on tomato, eggplant, zucchini slices and shredded cheese. Grill until melty and then cut into appetizer pieces.
