Need a YELLOW SQUASH casserole recipe w/Ritz!

I have 3 nice yellow squash that I'd like to make into a casserole like someone made for us. It's squash, cheese, (soup?) & Ritz topping, but I don't remember the measurements or soups, etc. Does this sound close to anything you know?

  • I would give you a bump, but I'm all out.

    I have done squash casserole with Ritz, egg, salt, pepper, shredded cheese, and green chili or Rotel. I don't remember ever adding any soup, but I expect that would be good too. I don't have a recipe, so I just kind of use whatever I have on hand.

  • How many eggs for 3 large squash, T&TMom? The green chili sounds really good.

    How can you run out of "bumps"? This is so new! :)

  • Alright, starting with the basics.... I did it w/o green chiles or Rotel THIS TIME, (to see if my 3 y/o will eat it, LOL) then will add the green chiles, then the next time after that, the Rotel. They sound AWESOME! In the oven, can't wait! ;)
