Good chicken recipes anyone?

I'm thinking of chicken tomorrow for dinner. We have boneless chicken breasts.
Any good chicken recipes that do NOT contain tomatoes or onions or garlic?

  • Yup! Coat a 13x9 pan (or what ever size hold the amount of breasts you are cooking) with cooking spray or I use a little oil. Line up the chicken breasts. lay Swiss cheese across the tops of all the chicken breasts (as much as you like). Take a box of stuffing mix (I use Pepridge Farm or Stove Top Stuffing) and sprinkle it all over the cheese and chicken to cover it all. Then take oil and sprinkle it over the top (not a lot, just a drizzle back and forth). Bake at 350 -365 for about an hour. Test temp with a meat thermometer if you have one or cut & make sure the chicken isn't pink. It's really good & easy and my DH who is not a fan of chicken loves it.

  • Cream Cheese Chicken

    1 lb chicken breast
1 packet dry italian dressing mix
    1/4 cup water
1 can cream of mushroom soup
8 oz cream cheese, room temp
    4 oz jar sliced mushrooms

Place chicken in a crockpot. Mix together water and dressing mix, pour over chicken and cook on low 4 hours. Then mix in soup, cream cheese, and mushrooms. Cook another hour making sure cream cheese is well mixed into the sauce. Serve over fettucine.
