what are some cool dinner ideas? it's hot and muggy here! ugh!

got any good recipes???? I know there's salads.....but what else? no money for take out either!!!

  • We are doing Salad Bar here. All the fixings, diced ham, pepperoni and cheese all set out and everyone can make their salads however they want them.

  • My kids like tuna salad sub.
    I add pickles, onion, celery, eggs, black olives, mayo, and a bit of mustard.
    Put on large french bread & top with cheese & lettuce.

  • I had salad bar most of the week. It involved very little cooking or preparation. For today I did cook pasta and heated up store bought meatballs and jarred spaghetti sauce.

  • Seviche - cold shrimp and crab, jalepeno, avacado, lime, with tortilla chips
    7 layer dip, add cubed cold chicken breast for a meal, warm tortillas
    Totellini salad - cook tortellini but cool, add roma tomatoes, italian dressing, olives, feta

  • Make some chicken breasts, then let them cool in the fridge. Eat cold chicken sandwiches. Yummy!

  • Raw Marinara Sauce

    I use a 4:1 ratio of raw tomatoes to sun dried tomatoes
    I also use the oil packed sun dried tomatoes - I buy a whole bunch of
    sundried tomatoes, pack them in olive oil, stick a clove of garlic in
    and a sprig of rosemary - then the sun dried tomatoes get so much

    This recipe makes about 4 - 6 servings depending on how much
    pasta/sauce you like.

    4 cups roma tomotoes
    1 cup sun dried tomatoes - covered in water and soaked for 2 - 4
    hours (reserve water in case you want thinner sauce)
    1 clove galric (or more to taste)
    1/4 small sweet onion
    1/4 cup fresh herbs (I use parsley and basil)

    Blend the Roma tomatoes first until they are fairly liquidy, then add remaining ingredients. If you have a Vita-Mix, blend on Hi for about 4 seconds and it will then have consistency of a thick meat sauce.
