Anyone have some yummy summer salad ideas?

I am stuck in a rut and need some fresh ideas.

  • Chickpea-Spinach Salad with Spiced Yogurt Dressing
    1/3 cup nonfat plain yogurt (use greek yogurt)
    1 tablespoon lemon juice
    1 tablespoon extra-virgin olive oil
    3/4 teaspoon ground cumin
    1/2 teaspoon ground ginger
    1 clove garlic, minced
    1/4 teaspoon salt, or to taste
    Freshly ground pepper to taste
    1.5 cups home cooked, or 1 15-ounce or 19-ounce can chickpeas, rinsed
    1 cup diced peeled cucumber (I use zucchini or broccoli)
    1 cup diced celery or fennel (I use jicama)
    1 cup grated carrots
    10 cups small spinach leaves or mesclun salad greens (about 8 ounces)
    To prepare dressing: Whisk yogurt, lemon juice, oil, cumin, ginger and garlic in a small bowl until smooth. Season with salt and pepper. To prepare salad: Combine chickpeas, cucumber, celery (or fennel) and carrots in a medium bowl. Add half the dressing and toss to coat.

  • I love putting cold cooked pasta in my salads....

    Also try pasta with fresh mozzarella and tomatoes...yummy!!

  • i like quinoa, with tomatoes, cilantro, black beans and jalapeno and fresh lime juice. Yummy!

  • I usually use strawberries, blueberries, cantaloupe, whatever I have and squeeze 1 lime and drizzle with honey. You can add a bit of chopped cilantro too. Just toss in the honey and lime juice. It's so refreshing.

  • I like to make italian pasta salad multi colored rotini, chopped smoky red peppers, chopped finely green pepper, salt, pepper, smoky paprika, sliced black olives..sometimes with fresh mozzarella balls...dress with Krtaft Zesty italian salad dressing.

  • Romaine letuce, shredded cabbage, fresh cilantro, crumbled tortilla chips and topped off with grilled chicken. We have been adding corn and beans on top as well, so far we are enjoying this salad for the summer. For a dressing, see if you like this mixture...spicy ranch from kraft and BBQ sauce together, enjoy!
