How to make enchiladas turn out right ???

When I make enchiladas the corn tortillas always crack before I can even get them in the oven. How do I fold them without cracking them? Ideas?

  • You have to dip them in oil, although water might soften them enough.

    I no longer make mine rolled up. I layer them casserole style. I coat the bottom of a 9 x 13 pan with sauce, then a layer of tortillas, then a layer of meat, olives, green onions, cheese, then more sauce, a layer of tortillas, repeat, top with another layer of tortillas, sauce, and sprinkle with green onions and sliced olives if you like and bake.

  • i always heat some oil in a skillet and quickly 'dunk' the tortillas in the oil to soften them up. it works wonderfully, but does add more calories/fat. of course, when i make enchiladas, i'm not trying to make health food :)

  • Heat them in the microwave covered in a moist paper towel. Or you can dip them in the enchilada sauce before you fill them.

  • I warm mine and then dip them in enchilada sauce. Another thing I do is to use flour tortillas. My family love them that way and they never crack!
