What do you serve with Grilled chicken? Quick need a side dish idea...

We are having dinner guests. (son and GF) over I have grilled chicken and corn on the cob. I do not have any potatoes. Any ideas??

  • How about some sort of rice? That could be substituted for the potatoes.

  • Macaroni salad is good. Cook the mac, drain and rinse with cold water. Add chopped onion and celery and mayo, salt, pepper. You can also add chopped egg, green pepper, crumbled bacon, whatever.

  • Veggie mix (broccoli, carrots, cauliflower) boiled or steamed with some splenda added.
    Tastes very good with the chicken and corn.

  • if you have rice, then heat some butter in a pan, saute a chopped onion and garlic until translucent. Add two cups of rice, and toast. If you have white wine, add half a cup. If not, just add four cups of chicken broth, or four boullon cubes and four cups of water. Cover. let cook for fifteen minutes, turn off heat.

    Now you can add some bells and whistles...fresh herbs, chopped fine, toasted nuts....

  • Buttered egg noodles sprinkled with garlic salt and oregano; mashed potatoes; green beans; asparagus; rice pilaf/brown rice; vegetable medley--carrots, cucumber, summer squash, broccoli, grilled shrimp; and/or crab cakes!

    Just about everything goes with grilled chicken! It's one of those staple foods that can be "mixed and matched" with everything I listed above and more! :o)
