2 Bumps

I'm tired of a cooking the same old stuff all the time, anyone have a recipe to share?

Slow cooker, or otherwise, and I don't like seafood. Thanks!

  • This is a recipe for Olive Cheese Melts hope you like it


    1 cup black olives, chopped
    1/3 cup green onions, chopped
    1 1/2 cups shredded Cheddar cheese
    1/2 teaspoon curry powder
    1/2 cup mayonnaise
    1/2 teaspoon salt
    8 English muffins, split in half
    1.Preheat oven to 400 degrees F (200 degrees C).
    2.In a medium-size mixing bowl, combine olives, green onions, Cheddar cheese, curry powder, mayonnaise, and salt. Mix well.
    3.Spread mixture on English muffins. Cut the English muffins into fourths. Note: If you want to freeze these, now is the time! Arrange the muffin pieces on a cookie sheet.
    4.Bake at 400 degrees F (200 degrees C) for 10 minutes.

  • Coconut Rice with Black Beans

    1 tablespoon butter
    1/2 shallot, minced
    1 cup uncooked jasmine rice
    3/4 cup coconut milk
    1 cup water
    1 pinch ground nutmeg
    1 (15 ounce) can black beans, rinsed and drained
    salt and pepper to tast
    1.Melt the butter in a small saucepan over medium heat. Stir in the shallot, and cook until the shallot has softened and turned translucent, about 3 minutes. Add the rice and stir until coated with the butter. Pour in the coconut milk and water; season with nutmeg. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the liquid has been absorbed and the rice is tender, about 18 minutes. Stir in the black beans, and cook a few minutes until hot.

  • Thanks for the reply autumnsunris113, I happen to have a can of coconut milk in the cabinet, bought it to make soup but my boyfriend didn't like it so haven't used it, I'll have to give this one a try.
