  • Here's my family's favorite:

1 bag of frozen hashbrowns, defrosted (country style work well b/c they're thicker cut)
    1 - 1lb. smoked sausage or kielbasa
    4 large eggs
2 cups shredded cheese of choice (we prefer the Kraft mexican seasoned style)
1 small or medium onion, chopped & sauted
    Ground pepper to taste
    Margarine to grease the pan

    Preheat oven to 350 degrees
    Grease a 9x13 casserole w/margarine & set aside
Chop & saute the onion & set aside
Chop the sausage or kielbasa into 1/4 inch pieces & fry up in a pan, then drain well, squeeze out as much grease as possible
In a large bowl mix hashbrowns w/onion, sausage, 1 cup of cheese & the eggs
Spread the mix into the casserole & sprinkle top with the 2nd cup of cheese (or to taste)
Bake at 350 degrees for an hour or until a knife inserted in the center comes out clean
Remove from oven & let it set for about 10 -15 minutes before cuttin

  • I don't have measurements, as I just throw stuff in and stir, til it looks good, but I use cream of celery soup (any cream of soup will work), shredded cheese, some onion, the hashbrowns, and some black pepper. Normally I use a 2-3lb bag of potatoes, 3 cans of soup, about a pound of cheese, and a whole chopped onion or a big shake of dried onions. Sometimes I'll mix in some milk too, it makes it creamier - it's better that way if we mix ham into it. Sometimes I'll crush some cornflakes, mix in melted butter, and spread that on top when almost done.
