I need some good salad recipes for a 4th of July BBQ I am hosting

Any and all kinds of salads. If we don't get blown away by the hurricane it will be at least 100 degrees so something refreshing will be perfect! Thanks!!

  • Its easy. "CornBread Salad I" by Rosemarie from allrecipes.
    Bake cornbread and layer 1/2 in bottom of dish.
    Beans Onions Peppers (optional for me)
    Lettuce (optional)
    Homeade Buttermilk Ranch dressing....oh yum
    Canned corn
    Remaining 1/2 of Cornbread

  • Since people worry about mayo based salads...

    I get the tri-color spiral noodles; boil and cool...then some chunks of various cheeses; some bite-size cut vegggies (mushrooms; broccoli; cauliflower etc)...and toss it all with the oil version of Ceasar dressing (I don't like the creamy) - or if you're not a fan of Ceasar you can use regular Italian too (again not the creamy style)

  • Summer salads I like to make are:

    Cucumber salad, very refreshing
    broccoli salad, delicious
    greek couscous salad, fabulous

    I also cut up some pepperoni or salami into cubes (buy it by the 'log' not slices) and toss that in there too...

  • I love to make fruit salad mixed with honey and cinnimon! it is always a big hit with kids and adults...I put apples, bananas, strawberries, mandarine oranges, grapes and pineapple then toss it with honey and cinnamon :)

    If you want to "cheat" you can get the canned fruit and just strain the juice from the can :)
