Do you have a rice pudding recipe?

Does anybody have a super good rice pudding recipe? Also can I use brown rice? ( I am allergic to white rice- will brown rice taste the same? if not that's okay the rest of my family isn't allergic to it.)

  • Here's my grandma's rice pudding recipe:
    1/2 cup rice (not instant)
    2 cups boiling water
    3 cups milk
    1/2 c. sugar
    1/2 teaspoon salt
    2 egg yolks
    1 teaspoon vanilla

    Cook rice in water. Add milk and simmer for 20 minutes. Add egg yolks, sugar and salt and continue simmering until creamy. (Don't give up, it can take a long time.) Remove from heat and add vanilla. Let set for a few minutes then sprinkle cinnamon over the top for taste.

  • Old fashion rice pudding..

    3 1/2 cups milk
    1/2 cup uncooked long grain rice
    1/3 cup sugar
    1/2 teaspoon salt
    1/2 cup raisins
    1 teaspoon vanilla extract
    Ground cinnamon

    1.In a saucepan, combine milk, rice, sugar and salt if desired; bring to a boil over medium heat, stirring constantly. Pour into a greased 1-1/2-qt. baking dish. Cover and bake at 325 degrees F for 45 minutes, stirring every 15 minutes. Add raisins and vanilla; cover and bake for 15 minutes. Sprinkle with cinnamon if desired. Serve warm or chilled. Store in the refrigerator.


    Diabetic Exchanges: One 1/2-cup serving (prepared with skim milk and without salt) equals 1 starch, 1 fruit, 1/2 skim milk; also, 177 calories, 83 mg sodium, 3 mg cholesterol, 37 gm carbohydrate, 7 gm protein, trace fat.

  • Brown rice has a definite different taste and texture than white rice, also takes longer to cook

  • Creamy Rice Pudding

    3/4 cup uncooked white rice
    2 cups milk, divided
    1/3 cup white sugar
    1/4 teaspoon salt
    1 egg, beaten
    2/3 cup golden raisins
    1 tablespoon butter
    1/2 teaspoon vanilla extract

    1.In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
    2.In another saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter and vanilla. Serve warm.

    This recipe may also be made using Splenda® instead of sugar. Use 1/3 the amount. This is an easy way to enjoy this great creamy recipe but cut down on the sugar and calories.
