best pesto recipes?

if you've got a good one, i need a couple :D

  • It's like the easiest thing on earth.

    2-3 bunches basil
    1/4 cup walnuts OR pine nute
    2-4 cloves garlic (depends on how garlicky you like it
    1/2 cup of GOOD parmesean cheese
    about 2/3 cups olive oil (you can play with it)
    salt & pepper to taste
    a squirt of lemon (optional)

    Throw it in a food processor until smooth.

    That is all you need. You can adjust the amount & play with it to find what you like.

  • It's best to eat right away, but If you have some left over, you can mix it with Mayo to make a very yummy pesto mayo whihc will keep for several weeks. Pesto mayo goes GREAT with chicken breast, salami & even burgers. I'll put pest mayo on just about

  • Spinach Basil Pesto:

    1 cup packed basil

    8 oz spinach leaves

    3 cloves of garlic (or to taste)

    1/2 cup pinenuts (i toasted mine)

    olive oil until cream texture- 1/2 cup or more

    1/2 tsp salt

    black pepper to taste

    1/2 cup grated parmesan (or to taste)

    Combine basil and spinach in a large food processor and pulse a bit to make room; add garlic, pinenuts and pulse more;turn it on and stream olive oil in until it reaches desired consistency. stir in salt, pepper and parmesan and store in a jar in the fridge.
