What types of foods do you take to picnics and potlucks?

I generally take a salad of some sort, once in a while a cake but looking for new ideas that are not too spendy.

  • Pasta or broccoli salad, or a dessert like peanut butter pie.....yummy and really easy

    1 pkg cream cheese, softened
    1/2 c. confectioner's sugar
    1/2c. peanut butter
    6 T milk
    1 tub cool whip
    1 graham cracker crust

    Beat cream cheese till smooth, slowly blend in sugar & peanut butter then milk. Fold in cool whip and pour in pie shell. Refrigerate overnight.

    Simple and yummy!

  • I usually take either fruit salad, pasta salad, chips and drinks, cookies or ravioli lasagna.

  • I take homemade fried chicken or a salad of some sort. I love taking a fruit salad.
    Or I'll bring a sparkly lemonade, corny cornbread, chili.

  • Chocolate Chocolate Cake

    1 box mix devils food cake
    1 cook and serve pudding mix
    3 cups of milk for the pudding mix
    1 pkg chocolate chips
    1/3 c.. walnuts chopped up, if you want!


    Prepare the cook and serve pudding mix as directed and when it's done dump the DRY cake mix into the pan and mix it together with the pudding. Pour and spread out into a 13x9 cake pan and bake 30 min @350 or until a knife comes out smooth in the center (don't worry if there are some bits of the cake, it just shouldn't be goopy)....
    take out of the oven and while hot sprinkle the WHOLE bag of chocolate chips and choppped up walnuts evenly on top....
    You can let it cool or you can serve it hot with ice cream!

  • Chickpea-Spinach Salad with Spiced Yogurt Dressing
    DRESSING
    1/3 cup nonfat plain yogurt (use greek yogurt)
    1 tablespoon lemon juice
    1 tablespoon extra-virgin olive oil
    3/4 teaspoon ground cumin
    1/2 teaspoon ground ginger
    1 clove garlic, minced
    1/4 teaspoon salt, or to taste
    Freshly ground pepper to taste
    SALAD
    1.5 cups home cooked, or 1 15-ounce or 19-ounce can chickpeas, rinsed
    1 cup diced peeled cucumber (I use zucchini or broccoli)
    1 cup diced celery or fennel (I use jicama)
    1 cup grated carrots
    10 cups small spinach leaves or mesclun salad greens (about 8 ounces)
    To prepare dressing: Whisk yogurt, lemon juice, oil, cumin, ginger and garlic in a small bowl until smooth. Season with salt and pepper. To prepare salad: Combine chickpeas, cucumber, celery (or fennel) and carrots in a medium bowl. Add half the dressing and toss to coat.

  • I always make a Beautiful Oreo Dirt Dessert in a beautiful trifle Dish! This year I tried for hours to feel Better to go to a 'Shower. But one Chemo left me home bound for 12 Days. I couldn't go! I heard I was missed since Everyone knows what I make/Bring. Its always a hit!
