  • Cheesy Potatoes

    * 2 lb. bag frozen Southern style hash brown potatoes
    * 8 oz. shredded cheddar cheese, divided
    * 1 pt. sour cream
    * 1 can cream of chicken soup
    * 1/2 c. finely chopped onion, sauteed in 1/2 c. margarine
    * 1 c. crushed potato chips, optional

    Combine hash browns, 2/3 c. cheese, sour cream, soup and onion. Mix well. Spread in a greased 9 x 13 inch pan. Combine remaining cheese with crushed potato chips and sprinkle over the potatoes. Bake at 375 degrees for 1 hour.

  • Here's my recipe (I don't measure, I dump til it looks pretty, so I'll guess with amounts). 2 lbs shredded hashbrowns, 16 oz shredded cheese (any orange or orange & white variety), onions (you can chop 1 whole onion or I usually use about 1/2 cup dried onions), 16 oz sour cream, 3 cans cream of celery soup, few dashes of black pepper. Mix all ingredients and spread in a well-greased 9x13 pan, bake for an hour or longer at 350. You can top it with crushed corn flakes (2-3 cups?) mixed with melted butter (1/2 - 1 stick), my MIL does all the time but I never do.
