I need some delicious summery recipes. Every reply gets a vote up! :)

I'm going shopping in about an hour, and I want some easy, quick recipes using lots of fresh fruits and vegetables..whether it be desserts, salads, appetizers, snacks. I'm just craving fresh fruit and veggies right now. Any ideas?

  • Tabbouleh
    1 box Far East Plain Cous Cous (On the same aisle as rice and pasta in your supermarket).
    2-3 cups finely chopped fresh italian parsley (If you like it herby go 3)
    1/2 cup chopped green onion, (or you can use red onion for a different taste)
    1 1/2 cups finely chopped fresh mint
    About 6-8 roma tomatoes seeded and diced
    1/4 - 1/2 cup fresh lemon juice
    3-4 tbls olive oil (I use lemon essence olive oil and lessen the amount of juice)
    1 package plain crumbled feta cheese
    salt to taste
    pepper to taste
    Prepare the cous cous as per the package, use the olive oil as recommended it will help prevent the cous cous from sticking together while cooling. Turn into a bowl, fluff with a fork and let it cool - fluffing occasionally. Add the parsley, onions, mint and tomatoes. Toss to combine. Then pour in lemon juice and then drizzle with olive oil
    and toss again. Then add the cheese and toss. Add salt and pepper

  • My Grandmother called this "Toss It In Salad"

    two handfuls seedless grapes halved. !/2 red !/2 green if you have them
    1 handfull blueberries
    1handful raspberries
    5-6 clementines peeled and divided (canned mandarin oranges (drained) if you need to)
    2 handfuls strawberries (hulled and halved)
    3/4 cup any chopped nut of your choice (she loved walnuts)
    Add chopped melon if you wish (Grandma said that makes it too much )

    You can just toss it together and served undress or you can dress it with some cool whip as a dessert salad. My favorite way is to pour about 1/2 cup poppy seed dressing (more or less to taste). You can increase or decrease amounts to feed as few or as many as you'd like.

  • Apple Chicken Salad
    Cooked chicken breast or whatever cuts you prefer.
    Apples cubed. I use different ones. Green, red and golden.
    Green onions chopped fine
    Celery chopped small
    Mix it all together. It is yummy with sourdough bread.

    I got a delicious peach cobbler recipe off their site. Fresh peaches are in season now....with some cinnamon, butter, flour, milk, We made it twice in a row.

  • Cold pasta salad, I used broken spaghetti noodles, italian dressing, fresh tomato and cucumber and let it sit over night.

  • Five cup Salad
    1 cup each:
    mandarins-well drained
    pineapple timbits-well drained
    shredded coconut
    sour cream
    Mix everything together and let set in fridge for a couple of hours before serving.

  • Gazpacho. SO YUMMY on a hot day. Here's a basic recipe:

    It's a spanish dish, very very cold fresh tomato soup. It's SO good. We lived in spain for 3 years and I ate this at least three times a month in the summer when we would go out to eat.

  • I have an easy cucumber pasta salad and it tastes good too!
    1 lb of cooked tube pasta rinsed on cold water
    2tbs veg oil
    2 small or 1 lg cucumber sliced thinly
    1 med onion sliced thin
    1c sugar
    1c water
    3/4c vinegar
    1 1/2tbs mustard & 1tbs parsley flakes
    1tsp each salt & pepper 1/2 tsp garlic salt
    Take the cooked pasta, cucumber, and onion -mix with the oil. Combime remaining ingredients, pour over the salad ,toss and chill for 3 to 4 hrs. You can adjust this recipe after you make it the first time, I did. Good Luck

  • I don't know if you want a good summer drink recipe, but here's one of my favorites (from allrecipes):

    Brazilian Lemonade

    2 limes
    1/2 cup sugar
    3 tablespoons sweetened condensed milk
    3 cups water

    1.Wash limes thoroughly. Cut off the ends and slice into eight wedges. Place limes in a blender with the sugar, sweetened condensed milk, water, and ice.
    2.Blend in an electric blender, pulsing 5 times. Strain through a fine mesh strainer to remove rinds. Serve over ice.

    It's also great with rum!
